Worship God and follow the Bible closely? Not a chance in hell. I don't think you could really claim either character were truly, or traditionally, religious in the sense people imagine because of this.
Sure it's more debatable how this would impact him in relation to religion given he is dealing with people who fundamentally want to do good but that's kind of the point here, the whole "you will not befriend a witch" message is loud and clear and Trevor ignores it and then some, several times over. Trevor might seem more actively religious than Simon does and but he's still hanging out with a witch, making friends with a vampire/dhampir and a devil forgemaster. Sure the guy uses churches for safety in CV2 but y'know that seems like a no brainer in his situation tbh, it's not as if God doesn't exist in CV he very clearly does to some extent or another. Simon actively does a lot of shit that is very suspect for someone to do who is living by Christianity, talking with ghosts, taking advantage of magic from the literal body parts of a demon lord, seeking help from, that's stuff he's knowingly doing (as opposed to things that weren't his fault but probably didn't win him any favours up top either like cursing Transylvania for 7 years, accidently reviving Dracula and causing his grandson and friends much trouble by making light of his "adventures"). A good amount of them are essentially exiled from society from Trevor's time all the way up to Simon's so they probably weren't actively doing the whole church goer thing. I think this is most accurate to the games' Belmonts. But for the Belmonts they are at the very least Catholic.
But Sypha did carry around a staff with the Eastern Orthodox Cross on it, and she was even sent out by the Church a few other soldiers once Dracula’s attacks started. When Carmilla and a few other night creatures got the witch trials started, the trials killed Sypha’s family which caused her to run and join the Eastern Orthodox Church for amnesty. In the games, Sypha came from a family of witches who were causing problems for Carmilla. A notable diversion was with Sypha and the addition of the Speakers. In the show they did their best to part ways with the faith of the characters. The Belmonts in the Games were Exiled, not Excommunicated, since the Belmonts had a good enough relationship with the church, when Dracula started razing cities to the ground after Lisa’s death, the Pope himself got into contact with Trevor. Especially given that the Belmonts have had holy powers ever since Leon.
